Gabi's German Apfeltarte (Apple Tart)

Ingredients

- Dough
- scant cup flour
- scant ½ cup sugar
- pinch of salt
- ½ cup cold butter
- 1 egg yolk

- Filling
- 2 lbs. apples (baking apples, Macintosh, Granny Smith work best)
- juice of one lemonbutter
- 1 egg white
- 2 tablespoons of milk

Note: This recipe uses a spring form tart pan. Grease it lightly with margarine or butter.
Method
- Knead flour, sugar, salt, butter, and egg yolk into a smooth dough. Form into a ball, cover and refrigerate for 30 minutes.
- Peel and core apples and cut them into thin slices. Mix with lemon juice.
- Using a lightly greased spring form pan, push the dough into the bottom and sides.
- Lay the apples on the dough.
- Mix egg white and milk together and drizzle onto apples.
- Bake in a pre-heated oven at 400 degrees for 50 minutes.
