Gabi's German Apfeltarte (Apple Tart)
6–8 portions

Ingredients

Dough
  • scant cup flour
  • scant ½ cup sugar
  • pinch of salt
  • ½ cup cold butter
  • 1 egg yolk

Filling
  • 2 lbs. apples (baking apples, Macintosh, Granny Smith work best)
  • juice of one lemonbutter
  • 1 egg white
  • 2 tablespoons of milk

Note: This recipe uses a spring form tart pan. Grease it lightly with margarine or butter.
Method
  1. Knead flour, sugar, salt, butter, and egg yolk into a smooth dough. Form into a ball, cover and refrigerate for 30 minutes.
  2. Peel and core apples and cut them into thin slices. Mix with lemon juice.
  3. Using a lightly greased spring form pan, push the dough into the bottom and sides.
  4. Lay the apples on the dough.
  5. Mix egg white and milk together and drizzle onto apples.
  6. Bake in a pre-heated oven at 400 degrees for 50 minutes.
