An Ashkenazic New Year’s Recipe

This is a family recipe that can be put together at the last minute and expanded to fit any number of guests at a holiday table.  Depending on the size of the carrots, we figure about 1 carrot per person.  Everything else is by eye and taste.  The carrots and the scallions can be prepared before hand and then combined with the honey and heated right before serving.

The carrot coins symbolize a wish at the High Holy Days for prosperity.  The green onions (scallions) represent fertility.  The honey represents a prayer for a sweet New Year.

Ingredients
(serves about 8 people)

  • 6 large carrots, peeled and sliced into ¼" coins
  • 2–3 scallions (green onions) cut into thin “coins.” Use both white and green parts.
  • 1 tablespoon of sweet butter honey
Directions

  1. Steam the carrots until tender and set aside.
  2. In a non-stick pan, melt the butter. (Butter flavored Pam can be substituted if desired.)
  3. Add the green onions and sauté over a low fire until they are well cooked.
  4. Add cooked carrots and sauté until well blended with green onions.  Add a little more butter if desired.
  5. Add 2–3 tablespoons of honey (depending on your taste) and mix thoroughly.  Cook 1–2 minutes until the mixture is well blended.  Serve immediately.
