Marx Family Apple Fritters
6–8 portions

Ingredients
  • 6 large apples, cored and peeled — any type, but Macintosh are particularly good
  • 2 eggs
  • ½ cup milk or half & half
  • 1 cup sifted flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. melted sweet butter or light salad oil
  • Light salad oil for frying - enough to make a depth of about 1” in a deep frying pan.
  • White sugar for topping fritters
  • Lemon juice
Method
  1. Cut apples crosswise into 4–5 “rings.”
  2. Beat eggs until well blended.
  3. Stir in milk.
  4. In a separate bowl, sift together flour, baking powder and salt.
  5. Combine with eggs and milk and beat together. Add butter/salad oil. Batter should be the consistency of very heavy cream. If necessary, add more milk to reach this texture.
  6. Put apple rings into batter.
  7. Heat salad oil for frying to 375 degrees.
  8. One by one, lift rings out of batter and allow excess batter to drip off. If batter seems to be thickening, add milk to thin as necessary.
  9. Place in pan. Do not crowd pan.
  10. Fry until brown, turning once or twice until the apples are cooked through.
  11. Place on paper towels to drain, then transfer to a cookie sheet.
  12. Sprinkle apple rings with sugar and keep warm in an oven, heated to 250 degrees.
  13. Serve with more sugar and a little sprinkle of lemon juice.
