Marx Family Apple Fritters

Ingredients
- 6 large apples, cored and peeled any type, but Macintosh are particularly good
- 2 eggs
- ½ cup milk or half & half
- 1 cup sifted flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. melted sweet butter or light salad oil
- Light salad oil for frying - enough to make a depth of about 1 in a deep frying pan.
- White sugar for topping fritters
- Lemon juice
Method
- Cut apples crosswise into 45 rings.
- Beat eggs until well blended.
- Stir in milk.
- In a separate bowl, sift together flour, baking powder and salt.
- Combine with eggs and milk and beat together. Add butter/salad oil. Batter should be the consistency of very heavy cream. If necessary, add more milk to reach this texture.
- Put apple rings into batter.
- Heat salad oil for frying to 375 degrees.
- One by one, lift rings out of batter and allow excess batter to drip off. If batter seems to be thickening, add milk to thin as necessary.
- Place in pan. Do not crowd pan.
- Fry until brown, turning once or twice until the apples are cooked through.
- Place on paper towels to drain, then transfer to a cookie sheet.
- Sprinkle apple rings with sugar and keep warm in an oven, heated to 250 degrees.
- Serve with more sugar and a little sprinkle of lemon juice.
