Poached Apples Diana
10–12 portions

Ingredients
  • 1 cinnamon stick
  • 6 large Gala apples (Macintosh also work well)
  • 1 vanilla bean or 1 teaspoon vanilla
  • juice of ½ lemon
  • ½ cup sugar or 3–4 packets of Sweet and Low
  • ½ cup of any of the following: Diet Raspberry Snapple, Diet Raspberry Soda, mix of apple juice and white wine, gingerale
  • Package of frozen, unsweetened raspberries
Method
  1. Peel and core apples and cut into 6-8 pieces
  2. Place apples, vanilla, lemon, sweetener, and liquid in a microwave dish.
  3. Cook on High setting uncovered for approximately 5 minutes.
  4. Stir apples and cook for 2 more minutes.
  5. Check for doneness. If necessary, cook longer until tender.
  6. Remove from microwave and add frozen raspberries. Do not stir. Permit berries to defrost on top of apples.
  7. Store in refrigerator.

Note: This can also be made on the stove in pan. This method works well with frozen peaches or fresh sliced peaches.
Serving suggestions
  1. Gently blend fruit together and top with yogurt, Cool Whip, or whipped cream.
  2. Serve as topping over ice cream. Also wonderful as a topping for sponge cake or pound cake.
